Perhaps it has something to do with growing up in a large family. Beneath our home, my father had a traditional txoko, and my mother always seemed to be surrounded by pots and pans. There were six of us siblings, and there were always gatherings, friends and guests coming over to share a meal.
As a child, I rarely felt completely comfortable in restaurants. I suppose the warmth and natural energy of a home are difficult things to recreate within a conventional dining room.
Many people ask me how Santa Rita Experience was born and why I started by hosting dinners at home. In reality, it all came from something very simple: the way I personally enjoy gastronomy when I leave my own home to dine out.
For many years, I found many dining formats excessively rigid and artificial. I am not talking about the type of cuisine, but about the atmosphere that is created, the dynamics of service and the energy that a gastronomic space conveys.
Every restaurant begins with a motivation, and that motivation eventually becomes the energy of the place itself.
Running a restaurant is not easy. The pressure of sustaining a gastronomic project often wears down the very positive energy with which it began.
